It’s normal for raw honey to crystallise over time, developing a creamy or grainy texture. Frosting may also appear as small white marks caused by trapped air bubbles. Once crystallised, honey becomes denser and lighter in colour, ranging from sunny yellow to creamy brown, like coffee with milk. The crystallisation time depends on the nectar composition, with higher fructose content leading to faster crystallisation (from two weeks to six months). - Care Storage and Recommendation
