The UK government provides specific parameters for honey under Schedule 1, Paragraph 12 of the Honey (England) Regulations 2015. These parameters include criteria such as the maximum moisture content, the percentage of reducing sugars, sucrose content, free acidity, diastase activity, and hydroxymethylfurfural (HMF) content. These standards ensure the quality and authenticity of honey sold in the market and legally be called certified raw honey.
According to UK legislation:
Moisture Content: Not more than 20%.
Reducing Sugars: At least 60% for blossom honey and 45% for honeydew honey.
Sucrose Content: Not more than 5% for most honey types.
Free Acidity: Not more than 50 milliequivalents per kilogram.
Diastase Activity: At least 8 on the Schade scale.
Hydroxymethylfurfural (HMF): Not more than 40 milligrams per kilogram.
