Raw Spring Flower Honey

Spring Flower Honey has a distinct visual appearance compared to other varieties. When freshly harvested, honey is transparent with minimal viscosity. Its colour can vary depending on the collection area, typically ranging from pale greenish to yellow. The flavour and colour depend on the types of pollen in the nectar, although this can be hard for many to identify.

 

Even within the same apiary, bees will not produce the same product for two consecutive years. The proportion of any given plant in the mix will vary each year — unless a beekeeper moves their hives to a specific area dominated by a single nectar source like a buckwheat field.

 

When natural honey is first extracted from the comb, it has no floral aroma. However, after 5-6 months (October- November), the distinctive aroma from various herbs and flowers will develop, creating a delicious and stable flavour. The honey-predominant pollen comes from the following flora: rapeseed, dandelion, acacia, cherry, currant, strawberry, pear, apple, and plum. The combination of these contributes to its exquisite aroma and taste.

 

Raw Wildflower Honey

From season to season, this type of raw honey may differ in colour, texture, and taste. Even its fragrance varies because the characteristics of the flora depend on which plant’s nectar predominates in the final product. The most common nectar sources for wildflower honey are thyme, sage, medicinal chamomile, acacia, and geranium. All of these plants contain natural disinfectant properties. 

 

The dominant nectar source determines the product’s colour and flavour profile. This honey can be light yellow, sparkling golden, delicate caramel, or bright orange. Deep amber and dark brown shades are equally common. Wildflower honey is rich and sweet yet delicate and soft, without excessive bitterness. It leaves a long-lasting, pleasant aftertaste with distinct herbal, floral and sweet-spicy undertones.

Raw Buckwheat Honey (Late Summer - Autumn)

Buckwheat honey is mostly harvested in August from the tiny flowers of buckwheat plants. For many, the word "buckwheat" evokes a flour substitute, but buckwheat is neither a grain nor a grass; it is related to rhubarb. Honeybees are particularly attracted to the astringent aroma of buckwheat flowers. Raw buckwheat honey is dark in colour and exceptionally rich in antioxidants, minerals, and iron as it remains unpasteurised.

 

Raw Buckwheat honey possesses unparalleled bold, robust, and unique flavours. As a monofloral honey, it is primarily collected from one flower source, making it distinct. Often described as "heavy," it carries caramel-like notes and has a dense, rich flavour. It's impossible to confuse this honey with other varieties, thanks to its distinctive aroma—slightly astringent, reminiscent of the bark of an old oak tree. It's often said that the darker the honey, the more antioxidants it contains.

 

Raw Forest Honey

Raw Forest Honey is sourced from the untouched forests of the Baltic region. Its colour ranges from toffee to dark amber, occasionally appearing deep brown. This honey is renowned for its complex, earthy, and herbal aroma, with distinct flavour nuances derived from a variety of plant sources.

Forest honey, in general, exhibits a wide range of colours, spanning the full spectrum of honey shades from light yellow to rich brown. It is produced from the nectar of wildflowers found in forests, including hawthorn, raspberry, lily of the valley, blueberry, fireweed, strawberry, meadowsweet, clover, black maple, linden, angelica, rowan, bird cherry, willow, and many others. The rich diversity of forest flora imparts this honey with its uniquely fragrant aroma. Its taste is characterised by a delicate flavour, enhanced by a very pleasant, distinctive, and slightly tart note..

 

This honey crystallises quite slowly, forming a mass with a heterogeneous consistency and small crystal grains. Its composition includes over 75% glucose and fructose, and once matured, it stores well for a long time.

  • Crystallisation: Raw honey naturally undergoes crystallisation, gradually thickening and developing a grainy texture. The process varies among different honey types, showcasing unique crystalline patterns. Colour and structure changes signify the raw, unpasteurized, and unprocessed nature of the honey.

    Frosting: Another characteristic of raw and unprocessed honey is frosting, appearing as small white streaks or crescents spreading on the jar's shoulder. These white areas result from tiny air bubbles trapped between the honey and the jar's side. Both frosting and crystallisation are intrinsic features that do not compromise the taste or quality of the honey.

    Colour Variations: Raw honey may exhibit differences in colour and taste from one batch to another. Honey adapts to seasonal and climatic conditions, reflecting the diverse diets of the bees.

    Storage: Ensure honey is stored in a dry place at or below room temperature, away from direct sunlight, and always secure the lid tightly.
