With a medium-dark hue, this honey has a dense, sweet taste and a soft, gentle crystal texture. Sourced from summer wildflowers such as daisies, clover, poppies, bellflowers, and fruit trees like apple, cherry, raspberry, and strawberry, it creates a rich and fragrant floral experience.

 

Raw Meadow Honey - Limited Stock

Harvested from untouched wild meadows, this honey offers a light, sweet taste with an exceptionally smooth and creamy texture. Available in limited quantities, it provides a delicate and pure flavour that captures the essence of nature’s untouched beauty.

 

Raw Buckwheat Honey (Late Summer - Autumn)

This honey has a robust, earthy flavour. It is characterized by a strong, sharp taste, deep toffee-like sweetnessand a slight bitterness reminiscent of dark chocolate, that makes your throat go numb and tingly. Collected from the buckwheat bloom, it features a smooth texture and stands out with its distinctive profile.

Complex, earthy, and herbal, this honey reveals subtle caramel notes with a slightly sharp aroma. Its colour ranges from golden to dark amber—sometimes even deep brown—depending on the dominant trees and flora from which the nectar is sourced.

  • Crystallisation: Raw honey naturally undergoes crystallisation, gradually thickening and developing a grainy texture. The process varies among different honey types, showcasing unique crystalline patterns. Colour and structure changes signify the raw, unpasteurized, and unprocessed nature of the honey.

    Frosting: Another characteristic of raw and unprocessed honey is frosting, appearing as small white streaks or crescents spreading on the jar's shoulder. These white areas result from tiny air bubbles trapped between the honey and the jar's side. Both frosting and crystallisation are intrinsic features that do not compromise the taste or quality of the honey.

    Colour Variations: Raw honey may exhibit differences in colour and taste from one batch to another. Honey adapts to seasonal and climatic conditions, reflecting the diverse diets of the bees.

    Storage: Ensure honey is stored in a dry place at or below room temperature, away from direct sunlight, and always secure the lid tightly.
