Wildflower honey, also known as polyfloral honey, is collected by bees from a variety of wildflowers and plants. The specific flowers and plants in the region determine the honey’s flavour and composition, which typically includes nectar and pollen from plants like dandelions, meadow grasses, and cornflowers. This honey is rich in fructose, glucose, vitamins, minerals, and enzymes.

 

Colour
Wildflower honey generally has a light-yellow colour. If it appears brown, it may contain a higher proportion of honeydew, which doesn't affect the health benefits but can alter the taste.

 

Taste
The taste is smooth, light, and sweet, typical of mild honey. Its creamy texture melts in the mouth, leaving a lingering, subtly sweet and slightly tangy aftertaste. The combination of flowers like clover and milk thistle gives the honey its sweet flavour, while herbs like cornflower add a light, fruity tartness.

The crystallisation time depends on the nectar composition, with higher fructose content leading to faster crystallisation (from two weeks to six months).
